Classic Puerto Rican Rice and Bean Delight

Step 1

Warm up a drizzle of olive oil in a cozy pan over medium heat - any medium-sized pan will do. Into the sizzling oil, add a spoonful of sofrito, crushed garlic, sazon seasoning, and a sprinkle of adobo. Let them mingle and dance for about 4 minutes, being careful not to let the garlic get too toasty. Now, toss in the rice and give it a good swirl until every grain is coated in those flavorful oils. Next, pour in a mix of chicken broth and water, giving everything a final stir.

Step 2

Let the pot bubble and simmer over medium-high heat until the liquid magic has been soaked up by the rice, which should start showing little craters on its surface - this usually takes about 20 to 25 minutes. Lower the flame to a gentle flicker. Gently fold in some vibrant peas and freshly chopped cilantro, gently mixing from the bottom up just once or twice. Cover the pot and let it rest for a cozy 10 minutes.
