Delicious & Easy Cucumber Chicken Rolls Recipe

Step 1

Cut the cucumbers lengthwise into thin slices using a mandoline or knife, aiming for slices about 1/8 inch thick.

Step 2

In a bowl, combine the chicken, Neufchatel cheese, mayonnaise, chopped green onions, diced tomato, a pinch of red pepper flakes, and a hint of garlic salt. Mix everything together until it is thoroughly combined.

Step 3

Spread out the cucumber slices on a flat surface. Take a dollop of the chicken mixture and place it at the bottom edge of each slice. Roll up the cucumber slice around the chicken mixture and secure it in place with a toothpick. Arrange the rolled-up slices upright on a serving plate, creating little cup-shaped rolls.

Step 4

For an added crunch, gently press a Snack Factory® Pretzel Crisp® about halfway into the chicken mixture of each roll.
