In a large mixing bowl, combine a blend of bread flour, all-purpose flour, and rye flour along with a pinch of salt. Pour in water, a drizzle of olive oil, and a dash of yeast. Stir with a wooden spoon until the mixture forms a sticky, slightly rough dough. If the dough seems too dry, you can incorporate an extra tablespoon of water.

Cover the bowl with plastic wrap and allow the dough to ferment and rise at room temperature for approximately 18 hours until it has more than doubled in size.

Carefully transfer the risen dough onto a floured surface. Divide it into two equal portions. Fold in the left side of one piece towards the center, then repeat with the top, right, and bottom edges. Flip the dough over so the seams are facing downward, creating a smooth, round top. Repeat the folding process with the second portion of dough.

Preheat your oven to 500 degrees F (260 degrees C) and prepare a heavy-duty baking sheet lined with parchment paper. Sprinkle a bit of cornmeal on top for added texture.
Step 5
Gently flatten and shape the dough into rustic rounds or ovals. Customize the toppings as you desire.
