Rustic Tomato Soup Recipe for Instant Pot®

Step 1

Begin by giving your tomatoes a good wash, ensuring they are clean and ready for use. Place them into a large 8-quart multi-functional pressure cooker, like the popular Instant Pot®. Adjust the quantity if needed, cutting some tomatoes to fit if they are too large. Next, pour in a 32-ounce carton of chicken broth, along with onion, garlic, pepper, and fragrant basil.

Seal the lid securely and engage the high-pressure setting following the appliance's guidelines. Set the timer for 25 minutes, allowing ample time for the pressure to build up. Once cooking is complete, use the natural-release method for 15 minutes, followed by a careful quick-release to release any remaining pressure. Open the lid and add the second can of chicken broth before switching to the Saute function.

Continue cooking, stirring occasionally, until the soup has thickened and reduced to your desired consistency, approximately 30 minutes. Utilize an immersion blender with a chopper attachment to blend the tomato mixture thoroughly. Transfer the soup to a generously sized bowl for serving.

In the same pot, melt butter using the Saute function. Incorporate flour into the butter, stirring continuously to create a smooth roux, which should take around 3 minutes. Gradually add 4 cups of the blended tomato mixture to the roux, stirring well to avoid any clumps.

Combine the remaining tomato mixture, along with sugar, salt, and a hint of red pepper flakes into the pot. Use an immersion blender with the whisk attachment to blend the soup until it reaches a velvety consistency without any lumps. Once ready, serve your delicious homemade tomato soup immediately.
