Savory Italian Sausage with Creamy Polenta in the Instant Pot

Step 1

In a medium-sized heat-resistant glass bowl like Pyrex®, mix together chicken broth, polenta, and half-and-half. Let it sit for a moment.

Heat up a multi-functional pressure cooker, such as an Instant Pot®, using the Saute function. Drizzle in grapeseed oil and let it heat up. Brown the sausages on each side, cooking for about 2 minutes. Add in the marinara sauce, onion, and bell pepper, stirring to blend flavors. Place a trivet in the pot and set the bowl of polenta on top. Seal the lid shut.

Step 3

Follow the manufacturer's instructions to set the pressure to high and set the timer for 10 minutes. Allow the pressure to build for 10 to 15 minutes.

Step 4

Carefully release the pressure using the quick-release method as per the manufacturer's guidelines, which should take around 5 minutes. Unlock and remove the lid. Stir in butter, garlic salt, red pepper, and Parmesan cheese into the polenta until smooth. Serve hot and enjoy your meal.
