Step 1: Prepare the Smooth Paste

Grab your blender.

Add these ingredients:

1 medium onion (just chop it roughly, no need to be perfect)

5-6 garlic cloves (no need to chop, just peel them)
-
2-inch piece of ginger (peel it and grate or chop it)
-
5-6 green chilies (break them into halves, or chop if you like them spicy)
-
½ bunch of coriander leaves (just roughly chop it)
-
1 large tomato (cut into small chunks)

Blend everything until it’s a smooth paste.

Set it aside for later.
Step 2: Prepare and Fry the Eggs

Boil 5-6 eggs and peel them carefully.

Make small marks on each egg using a fork. This helps the eggs soak up the flavors.

Heat ¼ cup of oil in a pan. You can use regular cooking oil or olive oil.

Fry the eggs in the hot oil until they turn light golden brown. Don’t rush; let them get crispy on the outside.

Once done, take them out and set them aside.
Step 3: Cook the Onion-Tomato Paste

In the same pan with the leftover oil, add the smooth paste you made earlier.

Cook the paste on medium heat for about 4-5 minutes. Stir occasionally.

The paste should thicken and dry out a little.

Step 4: Add the Spices

Add these spices to the pan:

1 tsp salt (adjust based on your taste)

1 tsp chili powder (for some heat!)

½ tsp turmeric powder (for color)

1 tsp coriander powder (for flavor)

½ tsp chili flakes (optional, for extra spice)

½ tsp cumin seeds (for that earthy taste)

Mix everything well and cook for another 2-3 minutes. Stir to make sure the spices don’t burn.
Step 5: Add the Cream for a Smooth Gravy

Add ½ cup cream into the pan.

You can use fresh cream or even heavy cream.

Stir well and cook for 2-3 more minutes until the gravy becomes smooth and creamy.
Step 6: Add the Fried Eggs

Add the fried eggs to the pan with the gravy.

You can cut the eggs in half for a beautiful presentation and for the gravy to seep inside.

Gently stir to coat the eggs in the creamy gravy. Be careful not to break the eggs.
Step 7: Garnish and Serve

Garnish with fresh coriander leaves to add color and freshness.

Serve your Reshmi Egg Masala with hot Lachha Parathas or steamed rice.
Pro Tips for Beginners:

Boiling eggs: Boil them for about 10 minutes for hard-boiled eggs. If you prefer them softer, 8 minutes works great.
