To start, in a saucepan, combine water with lentils and bring to a gentle boil. Once boiling, lower the heat, cover the saucepan, and let it simmer for about 15 minutes. Next, introduce some diced carrots, onions, a touch of jalapeno pepper for a kick, and minced garlic to the lentils. Let them cook together until the lentils turn tender, which should take another 15 minutes. Once done, take the saucepan off the heat and allow the lentil mixture to cool slightly.

Meanwhile, preheat your oven to a cozy 400 degrees F (200 degrees C) and prepare a wire rack by greasing it lightly to prevent sticking.

In a mixing bowl, combine breadcrumbs, eggs, a drizzle of olive oil, a pinch of salt, and some fragrant Italian seasoning. Add the lentil mixture to this bowl and stir until everything is well incorporated. Shape this flavorful mix into 6 to 8 patties and place them on the greased wire rack. For best results, let them chill in the refrigerator for about 15 minutes to help set.
